My name is Erica Manzo and I began my running journey after the birth of my fourth child in 2015. It wasn’t until November 2015 that I decided to improve my health through proper nutrition as well. Running for me was a quick route to weight loss, but being a mother of four I didn’t have the time nor the energy to workout 3 hours a day (I am also a fitness instructor). I had to change something because I love to eat and prefer to workout a ridiculous amount of hours so that I could continue to eat what I like without the weight gain.
I began to change how I viewed food from satisfaction as the food enters my mouth to what my body needs to perform at its best. In November of 2015, I began to cleanse my body from processed food and artificial sugars; it took some time to adjust but it was a perfect time as the holidays were around the corner. December is a perfect time to begin and prepare yourself for your fitness/health goals in 2018.
For me, meal planning takes place every Sunday and I can prepare my meals such as breakfast, lunch, and snacks for at least 3-4 days. The process takes about 1 hour and 30 minutes and with the help of my kids I can complete my prep in less than 1 hour. As I soak the beans and cook some chicken breast, I have my little ones help bag all my snack bags such as carrots, nuts and fruits.
My go-to breakfast item is oats. I prepare 5-6 jars with about 3/4ths of a cup of oats and add walnuts and craisins. I pour in cinnamon tea and honey for added sugar. If I feel on the wild side I can add fruits such as apple slices, blueberries or banana instead of the honey. Beans, chicken breast and veggies are what I typically have for lunch.
